Two Thanksgiving Desserts for Those Who Aren’t Into a Slice of Pie By Kristi Veliaj

Hey There Pretty Birds,

For all those with a sweet tooth, thanksgiving dessert wouldn’t be the same without the pies: Sweet potato pie, pumpkin pie, apple pie and all the classics. But, there are some folks who are not big fans of pies, and crave some other yummy treat. If you’ve already pulled one of your favorite auntie’s traditional recipes, think twice and try out these desserts that we’ve selected for you. Surprise your guests with an Apple Oatmeal Crisp and a Blackberry Lemon Cheesecake. Both delicious and extremely easy to prepare.

Blackberry Lemon Cheesecake

Blackberry Lemon Cheesecake

This is what you need:

For the filling
-500 g of cream cheese
-250 g of heavy cream
-3 tsp of coconut syrup
-powder sugar, as needed
-Lemon zest

For the base
– 400 g of digestive biscuits
-150 g of melted butter
-1/4 tsp of salt

For the topping
-2 cups of blackberries
-1 cup of blueberries
-Lemon zest

This is how you prepare it:

1. Melt butter in a small pan and start crumble digestive biscuits into a medium bowl. Once butter is melted, mix it with digestive biscuits, add a pinch of salt and work it until the it looks soft and oily. Move into a casserole and create with your hands a thick base.

2. In a medium bowl pour cream cheese and add lemon zest and coconut syrup. Stir energetically until ingredients are combined together. In a separate bowl whip heavy cream with some powder sugar until is think and firm.

3. Mix together whipped cream and cream cheese until you get a smooth, soft cream. Pour on top of your biscuit base (which you left cool down in the refrigerator for 10m).

4. Add your berries on top and lemon zest. Serve cold.

Apple Oatmeal Crisp

Apple Oatmeal Crisp

This is what you need:

For the filling
-9 cups sliced apples
-1/4 c. rum
-1/2 c. brown sugar
-3 tbs of melted butter
-1 tsp of cinnamon
-1/4 tsp of nutmeg
– 3 tbs flour
-1/4 tsp salt

For the topping
-3/4 cup flour
-1/2 c. oats
-1/4 tsp salt
-2/3 c. brown sugar
-1 tsp cinnamon
-3/4 tsp baking powder
-1/2 c. cold butter
-1/2 c. walnuts

This is how you prepare it:

1- Preheat oven at 350 degrees F, start peeling and chopping apples into thin slices. Then, mix apples with spices, flour, sugar, salt and rum in a bowl. After, move into a large casserole.

2- In a small bowl, combine together flour, oats, salt, brown sugar, cinnamon, baking powder, walnuts and butter. Work it until it gets crumbly and sexy.

3. Cover apples with crumble and move into the oven for 25m. Wait until you see small bubbles going up from the bottom. Once ready, wait half an hour to cool down and serve with walnuts and a cinnamon sprinkle on top.
