Think Pink Aman Canal Grande Venice By Tamu McPherson

Last night Claudia Schwarze, General Manager at the Aman Canal Grande Venice, invited me and a group of friends to the Aman for a Think Pink Dinner. The breathtaking hotel which calls the historic Palazzo Papadopoli home celebrated Think Pink and Breast Cancer Awareness Month with a special pink menu created by its Michelin Star Chef, Davide Oldani. In addition, to complete the pink theme of the evening, Chef Oldani’s creations were accompanied by a gorgeous selection of Veuve Clicquots Rosé Champagnes. All proceeds from yesterday’s Think Pink Dinner will be donated to La Fondazione Umberto Veronesi, a leading cancer research organization in Italy.

La Dogaressa Flowers adorned the table with gorgeous pink orchids and hydrangea.
Cooked-raw, soft-crisp, sour-basic cauliflower.
Rose, risone pasta and risina bean risotto.
Potato ravioli, Venitian cod fish and red chicory braised with wine.
The trio of Veuve Clicquot served at dinner. The cauliflower dish was paired with a Veuve Clicquot Rosé Non Vintage. The Rose risone pasta dish and the Potato ravioli dish were paired with Veuve Clicquot Rosé Vintage. The Filet of turbot was paired with La Grand Dame Rosé (very rare). The impressive Milan based sommelier Michela Cimatoribus lead us through the pairings.
